  • 3 lb potatoes

  • 1 onion, chopped

  • 8 oz thinly sliced prosciutto, optional

  • 4 Tbs Miyoko’s Creamery vegan unsalted butter

  • 2 Tbs olive oil

  • 1/8 tsp salt

  • 1/8 tsp black pepper

  • 1  1/2 tsp fresh chives or scallions

  • 4 Tbs Cashew cream

Preparation

  1. Place foil packets on the counter and coat each potato evenly with olive oil and vegan butter.

  2. Wash and slice potatoes into even thin slices.

  3. Place potato slices (approximately 1 potato per packet), onion, and prosciutto if using. Top with a generous dash of salt and pepper to taste. Fold each packet close.

  4. Grill over medium heat for 30 minutes or until soft.

  5. Sprinkle on additional toppings like chives, cashew cream, etc.

  6. Serve potato in foil but open-faced.
