Lean Gluten Free Meatloaf

Ingredients

  • 1 lb lean ground turkey
  • 1 large egg
  • ¼ cup gluten-free ketchup – see DIY ketchup recipe
  • 1 small yellow onion, diced
  • 1 small zucchini, shredded
  • 1 small carrot, shredded
  • 1 cup 4C gluten-free panko bread crumbs
  • 1 ½ teaspoons Italian seasoning
  • 1 teaspoon gluten-free Worcestershire sauce

Preparation

  1. Preheat the oven to 350°F.
  2. Combine all ingredients, except only half of the ketchup, into a large bowl.
  3. Knead the raw meat and continue to mix with hands until all ingredients are evenly combined.
  4. Press the meat mixture into a loaf pan.
  5. Bake for 30 minutes.
  6. After 30 minutes, take the meatloaf out, pour the remaining ketchup on top of the loaf, and spread evenly using a spatula.
  7. Put back in the oven and bake for an additional 30 minutes.
  8. Serve immediately.
