Prosciutto Wrapped Asparagus

Ingredients
- 1 lb asparagus, thick
- 1 tablespoon extra virgin olive oil
- 1 tablespoon melted Miyoko’s Creamery vegan unsalted butter
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- ⅛ teaspoon salt
- ⅛ teaspoon ground black pepper
- 8 oz thinly sliced prosciutto
Preparation
- Preheat the oven to 425°F.
- Make sure the asparagus is washed and trimmed appropriately.
- Lay a sheet of tin foil on the counter and place the asparagus on top in an even layer.
- In a bowl, mix together olive oil, melted butter, and seasonings.
- Brush the oil and seasoning mixture onto the asparagus, coating evenly.
- Lay out the prosciutto slices and slice them across to create long strips.
- Wrap one slice of prosciutto around each asparagus spear, repeating until all are wrapped.
- Bake for about 10 minutes, monitoring closely. Asparagus should be soft but not mushy, and baking times may vary.
