Prosciutto Wrapped Asparagus

Ingredients

  • 1 lb asparagus, thick
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon melted Miyoko’s Creamery vegan unsalted butter
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 8 oz thinly sliced prosciutto

Preparation

  1. Preheat the oven to 425°F.
  2. Make sure the asparagus is washed and trimmed appropriately.
  3. Lay a sheet of tin foil on the counter and place the asparagus on top in an even layer.
  4. In a bowl, mix together olive oil, melted butter, and seasonings.
  5. Brush the oil and seasoning mixture onto the asparagus, coating evenly.
  6. Lay out the prosciutto slices and slice them across to create long strips.
  7. Wrap one slice of prosciutto around each asparagus spear, repeating until all are wrapped.
  8. Bake for about 10 minutes, monitoring closely. Asparagus should be soft but not mushy, and baking times may vary.
