Quick & Easy Zesty Tomato Soup

Ingredients

  • 1 onion, diced
  • ½ cup fresh tomatoes, diced
  • 7 oz canned tomatoes
  • 1 ¾ cups coconut milk, light
  • 1 tablespoon white wine vinegar
  • 1 tablespoon honey
  • 1 tablespoon Miyoko’s Creamery vegan unsalted butter
  • 1 teaspoon salt
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic cloves, minced
  • 2 teaspoons ground turmeric
  • ½ teaspoon chili powder

Preparation

  1. Dice onion and tomato into small pieces.
  2. Put all ingredients into the Instant Pot and cook on High for 5 minutes. Leave alone for 10 minutes for pressure to dissolve. If using the stovetop, combine all ingredients into a soup pot and cook on high for 5 minutes.
  3. Use an immersion blender to evenly combine all ingredients.
  4. Serve immediately or store in an airtight container in the fridge.
