Ingredients
- 3 lb potatoes
- 1 onion, chopped
- 8 oz thinly sliced prosciutto (optional)
- 4 tablespoons Miyoko’s Creamery vegan unsalted butter
- 2 tablespoons olive oil
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- 1 ½ teaspoons fresh chives or scallions
- 4 tablespoons cashew cream
Preparation
- Place foil packets on the counter and coat each potato evenly with olive oil and vegan butter.
- Wash and slice potatoes into even thin slices.
- Place potato slices (approximately 1 potato per packet), onion, and prosciutto if using. Top with a generous dash of salt and pepper to taste. Fold each packet closed.
- Grill over medium heat for 30 minutes or until soft.
- Sprinkle on additional toppings like chives, cashew cream, etc.
- Serve potato in foil but open-faced.
