Ingredients
- 2 teaspoons olive oil
- 16 cherry tomatoes, halved
- 1 zucchini, quartered
- 1 cup red onion
- ½ cup pineapple tidbits
- 1 teaspoon pickled banana peppers (quantity to taste)
- 6 pitas
- 2 tablespoons pizza sauce
- 1 teaspoon green chiles
- 1 teaspoon feta cheese
Preparation
- Wash and cut the produce.
- Add veggies to a large bowl and toss with oil.
- Line a cookie sheet with aluminum foil and spread out the veggies on the foil.
- Roast at 425°F for about 13 minutes.
- Assemble pitas on the cookie sheet, reserving the chilies until serving.
- Bake at 425°F until heated through.
- Top with chilies and serve.
